We can also make them as our merienda and snacks. Chicken Macaroni Salad

To me, Filipino Chicken Macaroni Salad makes a good appetizer and snack. I also love to have this as a main dish (for some reason) especially if I am having stews such askaldereta ormenudo. This dish is typically served during Filipino fiestas and also during family outings and picnic. I remember having this regularly during a quick picnic by the beach and it goes well with Pinoy pork barbecue (skewered pork).
It is easy to make your own Filipino Chicken Macaroni Salad; all you have to do is prepare some of the ingredients beforehand. The elbow macaroni needs to be cooked and drained while the chicken needs to be boiled and shredded. Once the macaroni and chicken are ready, all you have to do is combine all the ingredients and toss. It will also be nice if you serve your Filipino Chicken Macaroni Salad chilled. I do this by mixing all the ingredients in a stainless mixing bowl. I place that same mixing bowl with the Filipino Chicken Macaroni Salad in the fridge. The stainless steel bowl will help the salad get cold faster and this will be beneficial if you are pressed for time.
Aside from macaroni, you can use other types of short cut pasta. Here are some examples: Mostaccioli, Penne, Rigatoni, Cellentani, Rotini, Cavatappi, Fideuà, and Maccheroncelli.

Crema De Fruta

Leche Plan

Leche Flan (also known as crème caramel and caramel custard) is a dessert made-up of eggs and milk with a soft caramel on top. This dessert is known throughout the world (especially in Europe) and has been in the dessert menu of most restaurants because of its convenience in preparation and long shelf life.
In the Philippines, Leche Flan is the top dessert of all time. During celebrations such as parties and town fiestas, the dining table won’t be complete without it.I remember the Leche Flan that my Lola Belen makes when I was still living in Las Pinas. It really tasted so rich and heavenly; everyone in our family always requests her to make leche flan during special occasions.

Menudo

Pork Menudo is the number one on the list of my comfort foods and it’s hard for me to last a month without trying one — literally. Some would say that I am addicted to this food while others would use the term “obsession”, I just simply look at it as a necessity – a basic necessity that I cannot live without.
In almost every Philippine town fiestas or gatherings, Pork Menudo can be seen in the dining table. This is one of the favorite “putahe” (dish) served and this was the reason why different variations of this dish existed. Many Pork Menudo recipes include hotdogs (pinoy red hotdogs), green peas, or garbanzos and others would add sun dried raisins too. I think that it is a regional thing because almost different provinces have their own version.

Pork Chop Suey

Chopsuey or Chop Suey is a dish made-up of meat (chicken or pork) and seafood (shrimp or fish) cooked with different kinds of vegetables. This dish is considered to be of Chinese origin but there are claims that Chopsuey is of American – Chinese origin that was made famous by Chinese immigrants in America.
In the Philippines, Chopsuey is a common dish and considered to be one of the top vegetable dishes. The local variation includes chicken liver, shrimp, and seasoned vegetables.

Embutido

Embutido is a type of meatloaf prepared Filipino style. Though a well known dish for the holidays, Embutido can be enjoyed everyday without any hassle. Several meat processing companies now produce this meatloaf for commercial purposes; all you have to do is grab one from your favorite grocery store.For those of you who want to enjoy the naturally prepared Embutido, this is the recipe to go for

Lechong Kawali

This Lechon Kawali recipe makes a whole slab of fried pork belly turned into a delicious pork dish with crisp, crackling skin with salty exterior and tender and juicy inside.
It is usually served with a side of Lechon Sauce.
Pork Belly is that only part of the pork that is used for this dish, the same part used to make bacon.
Because of the good amount of fat on this cut, the meat does not dry out during the cooking process.
Ideally, the procedure calls for the pork belly to be boiled until tender, and then sun-dried for 3-4 hours before deep-frying. Sun-drying will result in nice crackling skin.
However, for food safety reasons, I don't suggest sun-dying or even exposing the meat to temperatures between 41 and 140 degrees Fahrenheit (the danger zone, they say) - even if it's already been pre-cooked.
Certain meats that have been cured with salt or other curing solutions are safe to air-dry or sun-dry, like Beef Jerky, Tinapa or Tuyo.
To get a nice crisp skin, an option is to freeze the pork after it's been boiled.
This can give the same crackling skin effect for the Lechon Kawali - but please see Cook's Tips below on Safety during cooking.

Chicken Curry


This Filipino recipe is a creamy stew with a mild curry flavor, cooked with coconut milk, potatoes and bell peppers. The spiciness of the curry is mellowed out by the coconut milk, but it is still important to choose the kind of curry powder you buy, as they vary in heat intensity and spiciness.
Try to find one that will suit your taste.
If you like the Indian curry, you can buy the McCormick brand. It's reddish brown and with quite a strong curry taste.
For a more subtle taste, I like to use the brand found in most Asian supermarket with Thai characters on the label. The color is deep yellow and it's ingredients in the packaging includes curry powder, turmeric, garlic, onion, cumin, and chili.
Another option is the Golden Curry Brand, a Japanese favorite. It comes in Mild, Medium and Hot so you can pick your heat preference.
When stored in the pantry, the spiciness of the curry mellows out over time.
